Of course, you’ve heard me pledge my allegiance to “Cravings,” the Chrissy Teigen cookbook, many times by now but I promise, the recipe I’m about to share with you is worth the hype. I decided to give this recipe a try one Friday night, for a homemade comfort meal, that was a nice alternative to the usual weekend pizza.
This dish might sound like a side, and it can be one, but it’s hearty since it’s essentially just potatoes and broccoli held together with sour cream, and is large enough to eat as a main. If you want to make it as a side, try pairing it with a red meat for a slightly different twist on the traditional meat/potatoes/veggie combo. If you’re opting out of meat and want to try this as the star of the plate, go for a simple side, such as a charred carrot, to complete the meal.
This even satisfied my man’s Friday-night-splurge-meal craving. Trust me about this one…get curious and make it now. Pairs well with red!
